    Hello - from Knoxville, Tn - Go Vols!!!

    I Live in Knoxville,Tn.  I up until recently been smoking on mainly an offset smoker but my wife bought me a vertical smoker for father's day with an offset - so I'm excited to try a different approach. So any advice would be greatly appreciated.
