    shipping cheese

I have a good friend in CT that always mails me great Christmas packages of cookies or something his wife makes.  I wanted to smoke a couple blocks of cheese and send them to him.  Not sure it's a good idea to pack into a flat rate box and priority mail?  Any thoughts?  I wouldn't want to do it...

    Scored on some Dino bones!

Anybody located within an hour of Emmitsburg MD the Jubilee foods has dino bones for $0.99/lb.  I stopped in yesterday for some chuck roasts and saw these on sale.  Couldn't resist.  They were whole slabs, cut in  half, 2 halves per pack, vacuum packed and frozen.  One pack was about $8.  I got...

challenges with Brinkmann Square vertical smoker

I love my new Brinkman Vertical.  I had an ECB that rusted out and was looking to replace it with the same, but when I saw the vertical at Wally World I figured I'd give it a shot.  This thread was very helpful, suggesting mods to the unit.  I got it Wed. night, put it together, Thursday night I...

Is jeffs rib rub really worth paying for?

I'll give you a hint on the rub...the HEAT doesn't come from Napalm! LOL Couldn't resist. Enjoy the recipe. It's great on the pork/beef/chicken I've tried it on. So far no complaints from my guests either. The sauce is fantastic too. squirt

Any tips? First Smoke on ECB tonight.

    1. If your smoker doesn't have legs, set it up on blocks/bricks to get some air under it. It's got to have good air flow from underneath. 2. I drilled three 3/8" holes in the bottom of my ECB. Not the ash pan with the slats, the actual bottom part that has one large hole in the middle. This...

A tale of two chuckies-the great experiment

I did 2 tenders for sliced roast beef just last week, on 2 separate smokes. I did mine in an ECB on the top rack. I used one chimney of lump charcoal with about another chimney worth spread in a circle around the chimney. When the chimney's red hot, dump in the middle and put on the meat (3...

PP - Missing out with no finishing sauce?

smoke your meat and pull it. Mix the juices back in. Make up a batch of finishing sauce YOU like and put it in a container or cheap squeeze bottle and add it to your sammiches when you make them. Simple fix you'll both enjoy. Squirt

Brinkmann Smoke N Grill - Just aint hot!

Read the "sticky" at the top of this page titled "Char-griller Smoke and Pro with firebox mods". There's lots of ideas there and they make a huge difference. I suggest doing at least some kind of firebox mod and add baffles under the cooking grate to even out the heat.

    smoked rockfish

caught a limit of good eatin' sized rockfish (striped bass) this weekend on the Chesapeake. Kept 2 whole for the smoker. I ended up just scaling and filleting them and brined them in 2 cups water, 1/2 cup sugar and 1/4 cup salt for about an hour. Got the ECB fired up and threw the fillets on...

Food Network - smoked shrimp in a bowl

Anybody see the Food Network All-Star Grillfest South Beach on Sat. night? Alton Brown smoked shrimp in a stainless steel bowl. Just put lit charcoal in the bottom, topped with soaked wood chips, put brined shrimp on skewers on top of wood and put another bowl on for a lid. I did a pit beef...

    Marathon smoke!

Well, with a lot of help from the different sections of this forum I got my CGSP modified and running for a Memorial Day picnic/birthday party for my wife. I installed the lowered smoke stack, grates and firebox basket for the smoker. All made a HUGE difference on how my late father's smoker...

how do you clean up your smoker?

Howdy gang... First of all, I know all of this is pure fiction since there's no Q-view...but I assure you I'm left with a messy smoker! It's gonna be a tough job to get her back into shape. I just completed a 24 hour marathon smoke yesterday for the wife's birthday picnic. I'm new to smoking...

    Home Brewing

mostly hoppy ales, a few stouts, lagers and a pilsner. I tried a raspberry ale last year and it tastes okay, but not very fruity. Need to mash the berries next time to get the flavor out. I have perfected a true "coffee stout" recipe. A buddy gave me a recipe and told me to just brew up a...
