Switch to an East Oak. Much bigger chip tray and, in my opinion, better temperature control. The smoke last for a few hours before you have to add more chips. I've done multiple briskets (8-10 hour smoke) and they've all come out great. The only downside is they don't make a 40" model...

Is it ok to use mesquite chips from my chipper shredder in my MES? I would think so but I'm not sure if the smaller pieces from the chipper vs. wood chunks would have any affect. Thanks.
I'm looking for a brisket rub that'll make great bark with reduced pepper. I made a 50/50 kosher salt/course black pepper the last time I smoked. I thought the bark and taste were great, but my wife said it was too peppery. Does any one have a rub recipe that produce a great bark on a MES...

Hi all, I have a second hand MES 20071317. I've used it several times with no problems. However, during the last smoke it completely died after about 4 hours. Nothing lights up when I plug it in. The breaker isn't tripped and the outlet still has power. Replacing the control panel didn't do...
