AmesPhos Ratio???
If I’m cooking 10-12 briskets all ranging from 12-16 pounds would I get decent results if I were to run the formula for 14.5 pounds and and multiply the batch of injection solution for however many briskets I’m cooking? AmesPhos Ratio???
I’m looking at trying an AmesPhos injection on brisket at the restaurant I work for. We’re not a bbq restaurant, we’re a bar and grill with a bbq heavy menu if that makes any sense. Anyhow, Cooking for the day isn’t an option for us, really the only way we can make this all work is to batch cook...- smokinidahoan

Replacement Damper Help
Found some five inch screw on vents that should work well. I think just a little higher temp sealant on the edges and then the gasket on the door is going to help in controlling this cooker when we get some of our unpredictable Idaho weather. I’ll post some pictures when we get the mods done...- smokinidahoan

I’m the executive chef at a bar and grill and we’ve just bought a Meadow Creek pr72gt. This is the gas pig roaster, however we added the charcoal tray and second tier rack.
