    First Brisket

.   Not sure what happened when I tried to upload a photo before, but here is the brisket after smoking and resting, and the second photo is after I started slicing it. Meat wanted to fall apart when I sliced it.  Tasted good, but seemed a little dry.  I was having trouble maintaining the...

    First Brisket

I can't take credit for the idea of draping over a can, SmokinAl gave me that advice in a previous post.  When I smoked with a pork butt I got it to a certain temperature then I wrapped in foil for the rest of the time.  Is that something I should do with Beef, and if so at what temperature...

    First Brisket

Good advice, I will make sure to be patient with it.  I plan on smoking at 225.  I need to see how it is going to fit on the smoker, I am going to end up either draping it over a can, or cutting in half.

    First Brisket

Going to be smoking an 8lb flat tomorrow.  Tonight I am going to coat in mustard and put a rub on before wrapping in saran wrap and putting in the refrigerator.  I plan on starting the smoker at 6:00AM so that I will have enough time to smoke and let rest before we eat between 6 and 7 PM.  I...

    Fitting Brisket Flat in Smoker

I have seen where some people say cut it in half, and other people say never cut it in half.  Is this one of those things that is just a personal preference?

    Fitting Brisket Flat in Smoker

I am Going to be smoking my first brisket flat on Saturday.  When I was looking at Brisket Flats at the store they look too big to fit on a grate in my Dynaglo Offset Charcoal Smoker. Can a brisket flat be compressed somewhat to fit, or does anyone else have any suggestions on how they dealt...

    New to Smoking from Pennsylvania

I used it twice since I seasoned the smoker. First time did 2 pork butts, and the second time did 2 chickens.

    New Dyna-Glo vertical offset smoker

I recently got one also, and I am having the same problem with temperature spikes even when the intake damper is fully closed.  I have not sealed mine yet, and I have some leaks, but I assume that would not be causing the temperature to be higher?  Am I correct in thinking this, or could not...

    New to Smoking from Pennsylvania

Recently got a DynaGlo Offset Charcoal Smoker as a father's day gift and came across the forums when I was looking for information online.  I look forward to learning all I can from the other members of the forum, and also contributing to the forums when I gain some experience.
