Cant respond about the pellet smokers as have never used one.
But gas gives you pretty inexpensive operation ( i get about 35-40 hrs per tank) and less worrys about refueling compared to charcoal and easier to hold a set term.. at least comparted to my old ECB.

I can use my GOSM "propane" year round in Cincinnati not quite as cold as MI. but still cold in winter..
No problems keeping temp. However a few sheets of plywood and some hinges etc.. would probably solve your problem and give you a good "cover" for your smoker for a lot less cost.
Looks darn good... is that pie crust? on the outside? did you put the crust on near the end of the smoke or did you put it on from the start like a bacon wrap.?

I to have noticed a pretty big difference in heat between jalapenos always figured it was just the difference in plants..
I may try growing my own this yr.
