Thanks. It is a great trailer. It's a money making machine when I'm at a good event. With one person helping I've had $3,000 to $4,000 days.
At this point I'm done fighting. I am relocating from New York to the south and I'm not sure humid 100 + degree weather is a fun setting for BBQ...
Sure. Service is at the back of the trailer but with 3 options. out the left side, out the right side or straight out the back. Frankly, I was too busy making money with this setup so I didn't have time to take it offline and finish it out. I've had $4,000 days in front of the right crowd...
I have an enclosed catering trailer with smoker
The trailer includes
Steam Table
4 Burner stove
Hot holding cabinet
3 bay sink, not plumbed
Hot water heater, not installed
Prep table
Shelving
Ice chests (Multiple, extra large, I do not have a count)
Utensils
Folding tables
Steam table trays...
Thank you for the suggestion. I will look into it. The reason I'm interested in the larger single cabinet is part of my business is doing pig roasts. I need the space for a 100Lb + pig to be able to fit in there.
Hello everyone. Haven't posted here in a while because I've been too busy turning wood into ash and meat into money. :) It was a good year catering last year and I'm looking to expand. I was sitting at an event, in my two paid for 10x10 foot spaces (double the registration fee) and realized...
It's only a nightmare if the meat gets ruined.
Seriously, glad nothing important was damaged and no one was hurt. Makes one second think the idea of trying to set up a smoker for unattended operation.
I've got a 60. I'm very happy with it. I'm currently tinkering with it to learn the best way to configure/run it. In my opinion, the 60 is a very good size for family with the ability to make more for gatherings. It's almost big enough to cater with, but it you plan on getting serious with...
Just so we're on the same page and I really don't want to sound condescending.... when I refer to delta, that would be the total difference in the system. When I stated +/- 2 degrees, that was the range of temperatures. +/-2 degrees gives a delta of 4 degrees. Now having said that, and...
Here's a link to the thread that shows what I got from Rock's BBQ.

Yeah, part of the reason for the purchase was to get a higher stable operating temp. The other part was to get a much more...
Yes it is. I believe that some models of Stokers can vary the fan speed. The model I have (25cfm) only runs at one speed. The blue trace on the bottom is the fan trace. It really only tells 'on/off' state of the fan so the right axis is not used.
As far as Ben Lang goes. Please do not use...
