    Since you vac packed it, you can put the package in a container with cold water and put it in the fridge to thaw it. Just change the water every 6 to 8 hours or so and it will thaw a lot quicker.

    That looks like the chuck eye roasts I get here in Ohio. Usually take them up to 205 and make pulled beef. Combine it with Chef JJ's Au Jus and it is awesome! Great for sandwiches or on a pile of mashed potatoes.

    You can smoke and eat fresh mozzarella on the same day. Throw a hunk in when you are doing other cheese and you can have same day satisfaction!
