    Still trying to figure this forum out - but came to read and learn. Don't know if this answers a previous person, or starts my own thread... just wanted to introduce myself as a newly signed-up person. Raise sheep and poultry, have done other food-critters before. 61 YO and remembered my grandpa's neighbor having a smokehouse in the yard. She made her own dry chorizo. Trying to explore basic needs of a build.
