    I do spatchcock chickens all the time,no brine, 4 hrs in smoke at 225, comes out with a crispy skin, just make sure the IT is high enough.

    12 hrs in. 180 int. Took it out to foil it untill 205 int. Smells delicious

    Up every hour to add water ir rough. Fyi, if the pan dries out and fat dripped into it. Adding water creates a very nice fireball.
