    Well, last time I did a brisket was when I made this post.... I turned the pellet smoker up a fuzz, its stalled at 163.... Wrap in butcher paper now with some tallow & toss it in a 350 degree oven?

    Yes I know I could have just rendered my trimmings.... Went all in! Used the tallow as the binder for the s&p. Now she sits in fridge till friday... Will add the tallow to the butcher paper during the wrap.

    I like the idea of flipping occasionally that way you can somewhat take advantage of fatcap up if there is any advantage... I have no idea & seems like theres sooooo many different mindsets on this...

    Have a question for those that have experimented placing a brisket on the upper rack vs directly on the grate. Pitboss pro 1100 pellet smoker has a large wide upper shelf with plenty of clearance for a brisket & I personally never utilized this shelf , not sure if it will be beneficial at all...

    . Turned out ok, was trying to get just a little more pull to it vs total butter like my first brisket... I wrapped it in a towel & cooler for think 1.5 hours. Should have smoked it a bit longer & less rest time in this situation, had a few friends coming over.

    thanks for the quick reply & support chopsaw. Not sure if its my imagination but this smart & final choice seems like it was rendering way more fat during the smoke compared to the first swift brand from walmart one I smoked in the pictures above, Also went alot smoother..... We shall see...

    Doing a bad thing, trying to rush a brisket cook.... Would it be the end of the world having my PS pit temp at a consistent 300 versus lower 275??? Have fat side down... This is only my second brisket....
