Cook went from friday 4 pm done at 4am. I dozed off & when I got up internal temp was 208 & probed like butter. Giving off a ton of juices from what I can see. I thought I finally nailed it. Think where I went wrong was I didnt allow it to cool long enough to stop the cook before re-wrapping for...

from the search ive done here a few have asked the question but answers never go very far.... He seems to...

    more brisket advice???

Have a question for those that have experimented placing a brisket on the upper rack vs directly on the grate. Pitboss pro 1100 pellet smoker has a large wide upper shelf with plenty of clearance for a brisket & I personally never utilized this shelf , not sure if it will be beneficial at all...

    packer???

. Turned out ok, was trying to get just a little more pull to it vs total butter like my first brisket... I wrapped it in a towel & cooler for think 1.5 hours. Should have smoked it a bit longer & less rest time in this situation, had a few friends coming over.

    packer???

thanks for the quick reply & support chopsaw. Not sure if its my imagination but this smart & final choice seems like it was rendering way more fat during the smoke compared to the first swift brand from walmart one I smoked in the pictures above, Also went alot smoother..... We shall see...

    Party Wings!!!

My other half always deep fried wings.I was in the mood & first attempt at smoking them. Came out great in my opinion without the mess. Cooked at 300 & cranked hotter for the last 20 minutes or so. Forgot to take a pic of them sauced-up, needless to say theyre gone... 2 lb bag from smart &...

    Couple Butts

No reason to apologize I didnt get the stuff off of your reccomendation.... Was just at WM & thought KH, that suppose to be good stuff!! Just wanted to share my take & was curious if you still used it. The sugar content over powers any of the salt content in my opinion. Thought it would have...
