I did my first crack at smoking bacon during the Xmas holidays. I used a dry brine and skinless belly.
I was really impressed with the results, will be doing it again.
For a special treat, after you cube up your burnt ends, wrap them in thin bacon and cook till bacon is cooked, add to pan and glaze... you will not be disappointed...
Speaking of Jalapeno bacon, does anyone have a recipe to make this.
I tried some last summer in Montana and it was out of this world delicious.
Would they just use a Jalapeno rub do you think? Anyone have a recipe they would be willing to share?
