    Quick Korean BBQ Diner

have you seen the "Cooking with Dog" series on YouTube?  She makes some terrific (mostly Japanese) dishes.  There's a lot of insight into how the broths are created.  I've always loved Asian soups in general, Vietnamese, Japanese, Cambodian, Thai, all of 'em. no, she doesn't cook the dog, she...

standing rib roast makes great steaks, oh yeah

my wife brought a 6.5-lb. rib roast home last week.  I seared it on the Big Green Egg using Paul Prudhomme's approach; slice the fat cap off, throw some garlic powder, black pepper and salt on, crown it with thin-sliced onions, then put the cap back on and put it on the grill at about 500 for...

    Whole Turkey on MES30

that looks really good.  Chachere's on turkey legs is the stuff, it complements the natural flavor really well.  I'll be grilling our Thanksgiving bird Saturday, pretty much the same thing, although I'll stuff it with vegetables, and slather the top side in thick-sliced bacon.  mmmmmm, bacon.

Early Fall Smoke of the "Wild Turkey" variety. w/Qview

well, thanks, I totally WANT SOME RIBS NOW.   never had a shot at wild turkey, I bet it's good.  Never smoked the breast by itself either; they're hard enough to keep moist when it's a whole bird, I can't imagine doing them solo.  The bacon's a good start, I always cover our Thanksgiving turkey...

Rare Roast Beef (for Sammies) Lots of Views!!

it's in tin foil right now.  the closest thing we have to an autoslicer is an electric knife, so we'll see how that goes; I'm prolly just gonna slice it as thin as I can with that.  Internal temp ended up somewhere north of 140, took about 3 hours.  My wife made me cut a chunk off for beef tips...

Rare Roast Beef (for Sammies) Lots of Views!!

I mentioned this post to my wife this morning, and ended up this afternoon with a 10.5-lb. sirloin tip. Reckon I'm gonna try it   I'll probably amend the spices a bit with some help from Prudhomme's recipes; he's got a pretty good mix for beef, adds a little different pepper and other stuff, I...

good recipe; I used it on some thighs this afternoon.  Good low heat, I was worried it'd be too hot, but it was perfect.

    hey, y'all

part-time hobbyist grill guy here, got a Big Green Egg and some matches.  Ain't no chef, just like to throw something on the grill now and then, and think it's the best you can get.  Used to work with Boykjo; his talents don't stop at food, he's also the best welder I ever met in my life, told...
