Brisket I did a week ago! Smoked for 15 hours then she rested for 2 hours, sliced real thin with my meat slicer, added some pepper jack cheese and made a sandwich on sourdough bread, delicious!

I guess billowing was the wrong word, it does have that tbs affect sometimes but most of the time not even that, I will Definitely give wood chunks and no soak a try!

Made these ribs last weekend! I peeled the membrane off, rinsed them in cool water, patted dry, put a nice coating of yellow mustard to give it a nice crust and applied my dry rub to it! Smoked it for 5 hours at 225 in my gas smoker using hickory chips, I think I might try 6 or 7 hours next time...
