I bought a prime brisket from Costco. I was amazed at the thick layer of fat the butchers left on it. I trimmed as much as I could and then smoked it for 14-hours.
It turned out to be delicious and tender but again, the amount of fat rendered out in the cooking...
Has anyone organized a BBQ cook-off in their community? I live in a population 9,000 senior community just outside of Tucson, AZ and I'm sure I could interest more than a few smokers and grillers.
What kind of problems might I encounter? Might the HOA object due to the liability issues...
