    Wife made it while so I was at work, so I don't know exact. Roasted rice powder Salt Garlic Roasted Chili powder (chilies, lemongrass, salt). Sometimes we cheat and use packaged seasoning like this. I don't recognize this brand,but looks close.

    No joke! And don't get me started on porkbelly price. I can easily drop a Dennis Leary worthy rant on that without hesitation. I don't like that budget cuts fetch a premium. Recently saw pre-covid prices for skirt steak at same price as ribeye.

    9.99/lb for chuck clod seems a bit high. I know supply/demand raises prices, but that's usually one of the budget cuts. Also under 4lb makes me think eye of round, though still pricey for that cut.

    Difficult to answer without first knowing what more about your 'lectric smoker. Make,model etc. I'm assuming you have a MES, but you know what they say about assumptions...

    I'm not 100% on this, but you essentially made beef barbacoa. Traditionally, its buried. I'm not sure if smoking or braising disqualifies it from calling it barbacoa, but its good enough for me.
