Just came from Sams. Got 2 Fresh turkeys- reduced to 58 cents per pound. They want to move them out from Thanksgiving.
I plan to brine one turkey to smoke, and then had planned to freeze the other.
BUT got to thinking , Could I remove the first turkey from brine ( rinse, pat dry) and freeze it...

I have a couple of questionss
1. Has anyone upgraded an 800w unit to the 1200w AND installed the 800w unit to left of
chip box. Of course this would be on a seperate 110v input.

Has anyone use the cooking(roasting bags) like for turkeys to put ribs in with liquid instead of foil?
Seems that everytime I foil, I end up with a leak.

I have several questions about freezing.
Has anyone gotten several cryo packs of ribs from Sams, cut them to St Louis style.Mustuarded them and added rib rub, THEN frozen to be BBQ later?
If so, did you use vaccum bags? How long did you store...
How do most of you smoke your pork ribs in the MES?
Do you the 3-2-1 method? or just put in and leave til done?
Put in then spray every hour til done?
What temp do you use? What temp cook to ?
Remove when done- foil wrap ? for how long?

I'm a newbie with the MES(w window) from Sams.
This is third time to use unit. Did some chicken legs/thighs and some meatballs. All turned out great.
BUT when I put wood chips in ( 1 cup at a time) each hour.
The chips would start to smoke, then smoker would fill up with smoke,

I brined a pork butt. I preheated the smokehouse to 225.

Note: This smoker has built in temp probe for the meat.
I left my remote temp sensors back in IN as did not think I would be doing any smoking on this RV trip. We are in Summerdale AL.
They are in the SEASONAL section. Usually infront of the frozen food section. They are with gas grills,patio furniture etc.
I just looked on Sam website, they are not listed.
When MaMa gets back, I'll ask her for receipt for the SKU #. You might be able to have it shipped to local Sams.

We spend winters in Gulf Shores AL. The other day we were at SAM Club, and there it was. A MasterBuilt SmokeHouse with window in front. Wife said yes, so loaded it up and headed to RV.
