    Chef's Choice Knife Sharpeners

I've had my 120 for years now, one of my best kitchen investments.

Billbo's world famous dry rub & BBQ sauce recipe's

My thanks to Billbo for this rub.  We had the pork just as a roast for dinner, and it was amazing.  I don't have any Q-view - the photos just didn't look like much and weren't worth posting.  My wife raved about the roast, and she is usually underwhelmed with anything I smoke.

BBQ Sauce #2 - RUM Sweet Heat

This sounds interesting.  I love flavoring things with rum.  I wouldn't sub sriracha for the chili sauce, because the sriracha has a very distinctive taste, and it's a lot spicier.   Also, this is the first time I've ever seen anyone suggesting subbing for black pepper because it was too spicy...

Billbo's world famous dry rub & BBQ sauce recipe's

Just rubbed down a 4 pound bone-in pork shoulder.  I'll be using it for my first attempt at smoking on my new Dyna-Glo gas grill.  I did it quite a bit on my old Weber, but I know that this one will work differently so we shall see.  The weather is so beautiful that I had to do some outdoor...

Anyone know anything about Dyna-Glo gas grills?

I've done burgers, rib eye steaks and brats so far, and all seemed to come out nicely.  I don't like to carbonize my meat when I sear, so it seems fine to me.  Certainly better than paying the additional $400 for a Weber just to have the sear station.  I always let it preheat for 10-15 minutes...

    OH So Excited

I love my Thermapen.  I have the original, before they made it aerodynamic and water resistant.  Never had a problem with it, and it's into it's 3rd battery.  Don't know what I'd do without it - probably have a lot more trouble getting things cooked properly.

Beer of Choice when Manning The Smoker?

I'll be going to Denver several times during the summer to play golf, so I make them beer runs too.

Beer of Choice when Manning The Smoker?

Used to be Buffalo Gold, the first micro brew I ever tried, some 23 years ago.  Unfortunately, Coors apparently bought them out sometime in the last 5 years and ruined it, just like they do with all of their beers.  This summer I'll be looking for a replacement.  Fat Tire is a bit heavy for me...

Anyone know anything about Dyna-Glo gas grills?

I just got my 5 burner (plus side burner) Dyna Glo before Christmas.  It was on sale on Cyber Monday after Thanksgiving for about $100 of the regular price - $400 and free shipping through Home Depot.  Because of the weather and lack of any real opportunity, I have only used it once so far, but...

    cajun ptime rib recipe

You can mix up a batch of Emeril's Essence yourself and make as salty or not salty as you want.  I always try to have some on hand.

I must have lost my mind...

You mean there are kids in the world who don't like sucking on a rib bone?  I haven't yet met one.

    Prime rib for daughter

I'm picking mine up at the butcher in the morning.  It had better be pretty good, since I shelled out $140 for a 12-14 pound roast.  Most of the local beef here tends to be better than what you see in the grocery stores.  Lots of local cattle growers and many of them raise what would qualify as...

recently had smoker latex coated now it cooks with a smell that burns my eyes

Hmmm.... typical latex paint is not designed for such applications (latex is essentially rubber).  Heat resistant enamels are usually used for painting grills and smokers, and even those can eventually show some degradation after a few years of being subjected to high heat.  All of the...

    What's your occupation?

Journeyman machinist for 33 years, retired.  Started with a company that had some really old machine tools (during my apprenticeship I ran a gear cutter that was built during the civil war).  Made mining and smelting equipment for 12 years, some parts weighing more than 50 tons.  When that...

    Another thermapen sale ! !!

I've used my Thermapen for about 10 years now, including 2 years at our beach house in the Bahamas where the salt air killed just about every other electronic gadget I own, and my original Thermapen is still kicking.  It's on its 3rd battery, and I count on it for just about every piece of meat...
