My thanks to Billbo for this rub. We had the pork just as a roast for dinner, and it was amazing. I don't have any Q-view - the photos just didn't look like much and weren't worth posting. My wife raved about the roast, and she is usually underwhelmed with anything I smoke.
This sounds interesting. I love flavoring things with rum. I wouldn't sub sriracha for the chili sauce, because the sriracha has a very distinctive taste, and it's a lot spicier.

I love my Thermapen. I have the original, before they made it aerodynamic and water resistant. Never had a problem with it, and it's into it's 3rd battery. Don't know what I'd do without it - probably have a lot more trouble getting things cooked properly.
