I would still eat them .. as long as you canned them at the correct PSI for the amount of time it said to.. the reason I say this is because they tell you to let the jars sit in the steam till it cools so the jars will not get to cold too fast and break .. It also lets the water inside of the...
Ohh thats too bad .. you could go to the hardware store and get a new rack .. I just use the metal plate on the bottom and have never had any issues with jars braking ..

They look great and healthy .. Yes the black buckets will help beings that the ground temps are going to be colder than that of the buckets .. and peppers grow a lot better when the soil is above 60F .. Good luck hope they produce well for you !!
didn't your pressure canner come with a plate in the bottom ? if so thats what I have used in the past for my big stock pot...
Most are made cheap .. I replaced my water bath pot this year ... came with the rack 20 bucks at walmart .. if you don't let it sit in the water and dry it right away...
if you go and try and find a shoulder instead of a butt you may have better luck .. I was going around a few weeks ago Butt was 2.49lb while the shoulder was 1.29 think I was at Market Basket .. but even the meat market here McKennon's was waaayyyy over on their butt prices .. good luck .. ohh...
You best bet would be BJ's or Costco .. something of the sort .. I am in the Lawrence area myself and even the markets up in this area are either Over priced or they carry Junky meats ..
Buying in bulk will save you trips later on .. I know we always get the free passes to BJ's and Sams .. give...
well guess ya learn something new everyday .. even tho mine are weighted gaged they told me I still need to calibrate it could be the bolt action or something

WOW that's one serious pressure canner you have there ..
is it calibrated ? call the company before you use it .. you can take it to the county extention in some areas .. if they don't offer the service they sometimes will tell you how to do it yourself ..
