I agree, don't think the size of the fan is an issue. It is most likely user error, I'll get it figured out with time. Yes top vent is open, always is when I'm cooking.
How do you load your lit coals?
Positive, no auto tune. I ended up opening the other the other two vents and let the temp run high (270) shut them down and let the controller take over once it dropped. Seemed to run good like that, stayed a few degree +/- of target temp. I'll try it again like that and see if that's the ticket.
I cant seem to keep temps up using this Auber controller. I get the temp up to where I want the old fashion way, Th en when I try to use the controller it drops the temp down 25 to 30 degree below to the target temp. I got the 10cfm fan to be able to get higher temps when doing poultry but can't...

I too live in northern Illinois and yes, I smoke year round with the WSM. It holds temps quite well in colder temps. I had a Horizon Offset and it didn't get much use in the winter.
Both will give you great BBQ. I think you should be thinking more in line with do you want, feed the fire every 30 to 45 minutes or would you be more inclined to let the smoker do the work while you sit back and do other activities. An offset requires you to tend to it while the ceramic is more...
I have built a good half a dozen or so drums and currently use one when we bbq at work. They are in fact a wonderful smoker but not what I'm wanting this time around.
I understand they have good manual temp controls, I already have an 18.5 model. I'm looking to be super lazy on real long cooks without going to a watt burner.
