    Great advice! Thanks for passing that on. I agree 100% with everything you said. For this chunk of meat I defrosted in fridge and sliced it still partially frozen. Vacuum bagged - label and into deep freeze.

    Thanks - really happy with how it looked once I cut it up as in the bag it was a bit sad looking. I sliced it up into 14 steaks and 1 nice roast - I think Ill try the sou vide on the roast and see how that turns out.

    Pulled it out of the fridge and cut the bag off of it. It’s boneless - I am not a butcher by any stretch but I think it’s boneless ribeye?

    Yea - that sure seems about right. She didn’t know how long it has been in her deep freeze and I can’t tell yet but I’m hoping it’s not freezer burnt.
