For this chunk of meat I defrosted in fridge and sliced it still partially frozen. Vacuum bagged - label and into deep freeze.
Thanks - really happy with how it looked once I cut it up as in the bag it was a bit sad looking. I sliced it up into 14 steaks and 1 nice roast - I think Ill try the sou vide on the roast and see how that turns out.
