    Yup. I generally slowly dip the turkey in and out of the hot oil. If you do it in slow stages, you don't get the violent overflow.

    Remember the 4 hour rule. You really should get the Pork over 140 degrees within 4 hours. If you spend 2 hrs on the electric smoker at 160, it might be difficult to get the core of the meat to 140 within that window.

    Agreed, someone needs to find the relay and see what it is rated for. Also the wiring from the relay should be examined to see what gauge they are.
