A Bear From Log to Finish (Picture Heavy)

I've only been on the forum a short time, so this is the first time seeing this. So glad you bumped the post. Really enjoyed your how to. Great work loved the pictures especially the one of the real bear climbing the tree to get to your bear....too funny.

    Propane or gas?

Never had a gas smoker, but I love my MES 40 smoker. As mentioned before get the A-maz-n tray and you get plenty of smoke, and about as set and forget you can get. Daniel

Sounds good. I went ahead and got one and am seasoning it now. Seems to hold temps pretty well. Thanks again for the info and the help.

    Oklahoma Joe's Bandera Opinions

Now I have another question since you mentioned the water pan. On my MES I have to have the water pan installed but I don't use any water in it. So how about the water pan in the Bandera, are you saying you don't even put it in?

    Oklahoma Joe's Bandera Opinions

That was my thinking exactly. What about the fire bricks in the firebox, that looks interesting, did you by chance do that mod?

    My first pork loin

I know in the picture my loin looked pink, but believe me if it had been the wife would not have eaten it. I worried about the IT also because after searching on here I seen some people pull it at 145. Hope JJ can put some info on this also.
