I like to use Buttermilk only and after two - three hours I remove and place on a wire rack over large 9 x 13 inch for 4 hours in refrigerator to drain and at this time a put on pepper and any other spice or herb that you might want. Use this on all chicken and pork.

As always your the one to turn to for excellent suggestions related to smoking or maintenance! I remember when I first got my MES looking at suggestions and it was yours. Thanks for the helpful idea that does work!

What I have been doing to clean my MES 30's glass is to wet a paper towel and dip the tip into the ash from the wood tray or my A-Maze-N. Clean glass, then just need to wipe clean and your ready for the next smoke. Not sure who, but got the tip from someone on SmokingmeatForum.

I have to items showing in my Lists under my Profile. I have tried to remove the second one that has no picture (including items showing in way of smokers that I have) I have tried to remove all including picture but have had no luck. First picture I want to keep.

I am wanting to build my cold smoking using a mail box and I am not able to find any mailboxes that are not made out of galvanized metal. Where did you find yours. Question is because I have read that on should not use galvanized metal because it poisons food.
