I made a homemade rub that was suggested by a friend. It has coffee, cayenne pepper, brown sugar, Montreal steak seasoning and SPOG. I'm using hickory wood.
Smoked ribs for the first time. Used the 321 method and they came out amazing!!! Rubbed them with some mustard brown sugar and some special seasonings. When I wrapped them I put in butter more brown sugar and a sweet chili sauce.

I just did my first ever smoke and found it real hard to maintain temp. I did some research and found the baffle and tuning plates. Is there a way to make it so you don't have to drill holes for a rail?
