It was a two cut fillet. Not sure if that is what you are thinking of with a spiral cut. It sure was a hit at Christmas! Wish I had more pics of the slices but I was being pressed to get it served haha!
Does anyone know where I can buy a small alligator that can be shipped to smoke? I just saw some dudes doing it on bizarre Foods with Andrew Zimmern and want to try this on my own. Any advice is welcome! I'm willing to pay plenty of money to do this!

Wait.....so you are saying that I should plan about 16 hours then since each piece is about 8 pounds. I wouldn't plan on 74 hours ????(32 total pounds) I should plan off of individual piece and not total poundage correct?
