Thank you all. Where I'm at the only readily availabe hardwood that grows fast and can be dried quickly is Eucalyptus. It's a cash crop around here and all you really need is land for planting. But I'll just stick to charcoal with Mango for smoke.
Hey folks. Not a whole lot of Post Oak or Apple out here in SE Asia. Am thinking about using Mango or Eucalyptis for smoking protiens. Any thoughts folks? They are a Hardwood after all.
Curious as to what the minumum size Steel thickness should be to build a Horizontal Offset Smoker. Wood and Charcoal would be my Heat Source in the Firebox.
Also, could you get away with using a thinner sized piece of Steel as an insert of the FB since it will be offset?
