Planning to make the duck sausage this weekend and dont have but 1 day to deal with this, so can I stuff in the morning, let it sit/cure for a few hours, then smoke it the same day. Just wondering if I can get away without letting it cure all night.

I do my backstrap, goose, duck, and doves all like this. Either on the pit or chicken fried. We usually do a bunch of em on openin day of dove season, on the field, before the hunt. But they dont last long!!!!
