    I can control the temp from 160 to 300 easily.  Could go higher but scared of fire hazard.  Needle valve on my propane burner make temps easy to control

    Planning to make the duck sausage this weekend and dont have but 1 day to deal with this, so can I stuff in the morning, let it sit/cure for a few hours, then smoke it the same day. Just wondering if I can get away without letting it cure all night. Thanks, Joe

    I do my backstrap, goose, duck, and doves all like this. Either on the pit or chicken fried. We usually do a bunch of em on openin day of dove season, on the field, before the hunt. But they dont last long!!!!
