So after lots of research, reading all of the awesome threads here I finall embarked on my first smoke yesterday. A 4.5lb rack of pork spare ribs.
Got the fire going, got it up to temp, and put the ribs on. After checking it a few times and adding more charcoal it went downhill. It wouldn't...
Ok, so I'm new to this and this Sunday I'm going to be trying out my smoker for the first time (char-griller offset) and I'm a little scared haha
I have a couple of questions
1: do I put the wood directly on to the hot coals?
2: how much would should I use? (I'm smoking a 4lb rack of pork ribs)...

Can't wait to get started, the first thing I think I'm doing is some pulled pork for my housewarming party. Hopefully it comes out good seeing as my first smoke will be for a crowd! Haha
