    Ok... Ok... I might have over reacted to the temp spike I had... It wasn't ruined after all... But if you had to literally saw through the last one I did you'd understand my paranoia. I know I maybe had cooked it too hot, but I think part of it may have been the meat too.

    1:10 am - Probes don't really work for air temperature at all. It didn't work on the grill, it didn't work with a potato. P.O.S. That confirms that I was way to hot previously because my thermometer was saying at one time last week that the temp was 250, and it seems to be off by about 50...

    12:30 - Meat emergency... I KNEW THIS WOULD HAPPEN. Wind... COMPLETELY GONE. Temp = 275!!! I cleared out the heat shut up everything threw in some more hickory... Got it back down to 220... It's ruined! I know it! Well... It looks nice anyway. Internal temp is about 145.

    Good post. I was just going to ask this question but here it is! My friend at work has a mesquite tree and just had it trimmed so I told him to drop off a bunch of the branches. It's 110 here... so I expect it to be ready, say, next week. I just didn't know if I should take the bark off...

    Still thinking about my poor brisket from that other post. What kind of thermometers are you all using? I was originally using a wireless digital one with a probe to measure the air temp in the grill. Are they accurate if you leave them on the rack? I feel like I get odd readings from it...

    Thanks for all the advice. I think my first one may have been a little bit smaller. What really threw me off is I feel like there is no way I had it hotter this time w/ the baffle than last time when I cooked it on the hot side by the firebox. I might have to have a brisket test day this...
