I don't really see much of a point. I've searched and this same complaint has showed up on Reddit and other bbq/cooking forums over the years.

Thanks for you help. The recipe that I made was a sausage, rib, kale and lima bean soup (also contains leeks, carrots, onions, garlic and jalapeno).
The recipe suggested curing the ribs first (with Morton TQ). Not sure how much of a difference that made, but either way the soup turned out great.

That sounds about right. I did end up taking the smaller one at a lower temperature than the larger one.
The larger one I was really happy with. When I poked it it almost shook like a Jello mold.
