    One more turkey ?

    Doing a 12 lb turkey and on pit barrel cooker and want to know what temperature to pull from the cooker? I understand it needs to be 165 upon completion but some say pull when the breast temperature is a little lower and it will continue to cook as it rests. Trying to avoid a dry bird.

    I have always used Killer Hogs Pork rub and my wife accidentally ordered Killer Hogs HOT version. We aren`t big fans of a lot of heat but do you think this will be overly hot? Thinking I have a little of the regular rub and just going light on the Hot version?

    I`m don`t own a PBC but have a Barrel House Cooker which I think is very similar. My suggestion might be to give it a little more air through the vent system.

    Brine or not to brine

    I vote "yes" on the brining. In my limited experience it gives a much moister and tastier result. IMO you don`t have to get too crazy with the ingredients with kosher salt being the essential ingredient. Good luck!

    Lifespan of a Masterbuilt Smoker

    Sadly, my indoor stored MES didn`t make it one year and maybe 6 smokes at most. I see others on here have had better luck and I hope you do as well.
