Doing a 12 lb turkey and on pit barrel cooker and want to know what temperature to pull from the cooker?
I understand it needs to be 165 upon completion but some say pull when the breast temperature is a little lower and it will continue to cook as it rests.

I have always used Killer Hogs Pork rub and my wife accidentally ordered Killer Hogs HOT version. We aren`t big fans of a lot of heat but do you think this will be overly hot? Thinking I have a little of the regular rub and just going light on the Hot version?

I vote "yes" on the brining. In my limited experience it gives a much moister and tastier result. IMO you don`t have to get too crazy with the ingredients with kosher salt being the essential ingredient.

I have my eye on one of these that is being sold used for $350 on CL . The owner says it has only been used 6 times. Does anyone have thoughts on the product and the asking price? I see it appears Home Depot sells this model for around $630 locally.
