First time brining and smoking chicken. I just cut a 3 1/2 lb. bird in half. Put it in the brine of 1 gal water, 1 cup Kosher salt, 1/2 cup sugar, 3/4 T onion powder. 3/4 T garlic powder and 1/2 T black pepper. Filled a one gallon freezer bag with ice and placed it on top of the chicken to...

    Question about marinating chicken

Hey Peixegato try this: 1 part soy sauce 2-3 parts apple juice Marinate over night. The chicken will absorb the marinade. Great with pork chops too. Enjoy! Mark

    How Many Mes Owners Here?

I have a MES 30 and I really like it. I did the 14 hour smokes with the ECB and the butts were great. Everything was great on the ECB. But...if you want some sleep...the MES is the answer. Crumble a little charcoal in with the chips. You'll get the flavor!

help! i don't want to quit smoking!

The first time I used my MES I got very little smoke too. The problem was the placement of the chip pan. When you slide it in, it must be in contact with the heating element. It is easy to slide it in incorrectly (too high above the element). Hope this gets you going. Mark
