How do you all experiment? So that the smoking is quick and easy, and you don't have a lot of food.
I'm still a newbie and trying to get good, to create smoked meat that is tasty inside and out (like bacon?).
I did a smoke this past weekend > 1 rack of rib > 2-2-1 method

After I'm done smoking, and I try the meat after, it just doesn't wow me.
Yet, if I try the meat 1-2 days later, I can smell and taste the smoke and t's pretty good.
Has anyone experience this? What's going on here? It's like I'm de-sensitized to my work initially.

With that (microwave mod) in mind, one could also use an old toaster oven. I'd much prefer that over a painted mailbox. It should be safe right, cause a toaster is already made for food? Would smoking do anything different to the inside metal?
Come to think of it, I might save the tinkering as a side hobby. I'm just interested in getting up to speed quickly (if that's possible) on smoking/creating great tasting food.
Interesting, vent mod for the side ... cause when you have the AMNPS, there really isn't a need for the loader? I supposed opening it a bit would work also? Though vent mod would be just as nice. I might try the mailbox mod route, that seems worthy of trying for a lot of gain.

Thanks for the info, regarding the airflow. I saw on another thread someone potentially using galvanized metal from a home improvement store, which they said is not good. Thus, looking through the kitchen might be safe bet. I think it might be fun to tinker with, but we'll see how much...
