Smoking Fish Without Using Any Type Of Brine

Smoked fish (salmon) for the first time yesterday. Never read up at all on how to do it until I had it seasoned up and waiting on the pellet grill to get going. That is when I read about the hours of brining. Too late at that point. Just one filet, it went straight from the packaging to the...

    Smithfield closes?

Being in the Transportation industry, I can say that it’s not only a lack of manpower to move product, but it has quickly turned into a situation where many will be forced to park trucks in the bank lots because the rates no longer allow them to stay in business. Myself, I’ve been parked for...

    Smithfield closes?

Red tape always causes issues. Demand also creates issues. People eating at home results in far less waste. That is a good thing, but something our economy never accounted for. So much we just don’t know in terms of the future right now.

    Smithfield closes?

The population didn’t change when we entered the Great Depression either. Not saying we are there, but the fact that the same amount of people live here means nothing. We export a massive amount of food. When those people can’t afford it, production takes a hit. People don’t have the same...

Temp on the bird is 120 currently, just threw in the veggies. Gonna smoke for a few more degrees then crank it up to crisp the skin. Never cook these in a pan, but we decided we would try throwing in all the veggies about halfway through to see how it all turns out.

New from Northwest Arkansas - pitboss owner

Just ditched Facebook and found this place while looking for a forum to discuss outdoor grilling/smoking. Got my pitboss toward the end of summer, first pellet grill, always had a stick burner in the past. Wanted a Pitts, budget told me to get the pitboss 1100 from Lowe’s. Been doing lots of...

    Longest butt smoke ever

Had one take forever yesterday as well. Put it on at 0700, 8 pounds. Planned on eating at 6:00pm, we were only at 180 at that point. Stalled at 165 for what seemed like forever. Needless to say, we snacked a bit until we could eat the anticipated tacos, lol.
