    Awesome, thx tallbm! I am using a dual probe thermometer but it wasn't pictured since this was just the smoke testing phase. It's got a wireless receiver as well, which is super handy. Also I'll have to give your chicken advice a try the next time, that sounds excellent. Cheers~

    Dude, thanks! That's exactly the information I was looking for. I mostly use stainless steel pans with racks so dripping is not a problem. I'll be testing this with a section of pork loin tomorrow!

    I seasoned it as per the instructions, and hand-washed everything I could. But I see your point, after all it was the very first time in use and additional seasoning time probably wouldn't have hurt. Hopefully I'll get better with repeated usage.
