I'm intending to use this "Pig Roaster" to smoke about 60+# of brisket and than later in the smoke about 30 # of game hens--I'm intending to keep temp around 225 and since the PR60 does not really allow for adding more fuel after loading, i plan on using 80# of kings for lump briquet...
So to even out the cooking times I simply doubled the "brisket" over on itself. For prep I brined it in a fish sauce brine spiked with indonesian long pepper and shallots. then made a fish sauce simple syrup for a finishing glaze.
