Cooking for a group in an ECB

Thanks for the ideas. I think I might try to use two or three skewers stuck between them to hold them up during the cook.  This might give me an excuse to do a test smoke of two butts next week.  I don't have access to a vacuum sealer (yet) and will spend the day before the smoke traveling 6hrs...

Cooking for a group in an ECB

Now that I have my first couple months of smoking under my belt, I have been nominated to cater a camping trip for around 30 people.  I will be smoking on a Master Forge Charcoal Smoker (similar to a Brinkman Gourmet).    My plan is to smoke three 9lb Boston Butts at once.  The other day I...

    Craigslist Memphis WSM $150

Hey guys,    I just found a Weber Smoky Mt. on craigs list for $150.  If I hadn't just bought a smoker last week, I would snag this.  Hope it will go to a good home. http://memphis.craigslist.org/for/2328864423.html

I have assumed that smoking ribs would be too difficult.  A few weeks ago, I stumbled onto this site and convinced myself I had to try this.     Earlier this...

    New from Memphis

Thanks for the warm welcomes.  Yes, someday I would like to get a WSM, but it will be a few years before I can step up.  I went with the Master Forge Charcoal Smoker. Tonight was it's first burn. I started with a small chimney full of lump charcoal  dumped onto a ring of unlit.  With the water...

    New from Memphis

Howdy guys,    My name is Bryan and I am looking to get into smoking meats.  I grew up in the Boy Scouts which gave me a good background and love for outdoor cooking, mainly using cast iron.  Recently, my wife and I moved to Memphis, TN where I am a new stay-at-home dad. My new job has me...
