    Pork Tenderloin ?

I like to put on a sweet rub, same as I do for pork butt, and put two together (pointing opposite directions so that together it is approximately the same diameter all the way across). Then I cut it into medallions about an inch or so thick. Wrap each medallion with a piece of bacon and use a...

Sponsored Giveaway for Inkbird 150 feet Bluetooth signal barbecue thermometer IBT-4XS with 4 probes

The range on this thing would be a huge improvement to the similar product that I am currently using. My smoking setup is in the side yard so when i go to the other side of the house I lose connection every time, but 150ft would more than cover it! I'd use it on every cook, but especially those...

    That’s right! The boneyard . . .

1st crack at wings on the WSM

The wings came out AWESOME! I was pleasantly surprised at how well they came out and how easy it was. They were in the smoke for about an hour before I checked them. They had pretty good color by then, so I moved them over to the hot grill. I ended up leaving a handful unsauced for comparison. I...

    First smoke upcoming

I say the pork butt because they are pretty hard to mess up as they are very forgiving. You can cook it at anywhere from 225-300+. To speed things up, wrap with foil once the meat gets to about 160 or so. Pull it off the cooker at an IT of 195-205, or once it’s probe tender. All kinds of rub...

1st crack at wings on the WSM

My son was sick today so I had to stay home with him. I decided since I didn’t get a chance to smoke anything over the weekend, that I’d give some wings a try on the WSM I’ve been learning over the last couple months. As this was last minute, I decided to just work with what I had as far as...

    Help with smoking 2 butts

I would probably turn it up to 300, but I have read recipes before that say you can finish it in the oven at 350. Pork butt is pretty forgiving, so it can handle the higher temp better than most other meats that you would typically cook “low and slow”

Long start up time on WSM

At 190, the white smoke was still rolling, but starting to fade a little bit. My thought with using a couple extra coals but keeping the bottom vents just slightly cracked, is that it should reach a steady temp a little faster. And from what I’ve noticed so far, it seems the best smelling and...

Long start up time on WSM

So I finally got a chance to put noboundaries’ advice to use, I’ve got some baby backs on as we speak. Starting with the bottom vents only slightly cracked open definitely helped keep the temps under control (it’s been cruising around 235 the whole time and never got above 245 ) but it took...

Long start up time on WSM

I’ll give it a shot! Thanks for the advice.

Long start up time on WSM

To answer your other questions, I try to mix the wood fairly evenly so one piece might be pretty close to the dimple. And I live in SoCal, so not at high altitude or anything.

Long start up time on WSM

I have the iGrill that I run with it, though the dome temp is usually pretty close to my therm temp. I tried using more like 8 lit coals the first couple go’s, but tried a few more each of the last couple tries without much change. The one thing is, with the large chimney starter it’s seems...

Long start up time on WSM

I’m trying to figure out why it’s taking so long for the thick white smoke and charcoal start up smell to clear on my 18” WSM, usually 2+ hours after adding the lit coals to the unlit (minion method). Here’s my typical process: get about 8-15 coals (embers from Home Depot) going in a large...

    Weber Mastertouch vs. Smokey Mountain

For those who like a follow up/conclusion to a thread. . . I ended up going with the 18.5” WSM. The maiden voyage will be a pork butt tomorrow. I appreciate all of the input!

Christmas came early - 24" Smoke Vault

You’ll love it and $45 bucks is a great price for a well taken care of smoker! I love mine and to be honest I haven’t made a single mod. The simple design makes it easy to use and pretty slim chances of having much go wrong with it. Temps stay pretty stable for me, but it doesn’t get very cold...
