It's the grill lid switch. If it is "open" (not shorted), the fan will shut off at 500 degrees. The switch is either not being depressed fully, or maybe a pin is bent in the connector.
Congrats on your purchase. I've had my 800 for a few months and have used it a lot and enjoyed every cook. My recommendations are to make sure and season it following the directions. Get the MB cover for it unless it'll be kept out of the elements. It's a quality cover and worth the price. Mods...
I typically buy turkeys in the 20lb range. Mine always take longer to thaw than the 4-5 lbs rule. I move them to the fridge on Wednesday, the week prior. I don't know if the size factors in, but that's consistently my experience.
