I picked up 2 adjustable thermometers from BBQ Smoker Supply for $20 each and use a Maverick ET733 for probes. U can also try the Thermopro TP 20. If yours are adjustable there will be a small screw on the back

Brave sir Robin,
Did you buy adjustable gauges? If so adjust them in boiling water. My CC is 10 degrees warmer on the FB end after installing the gaskets. This is normal. They make a big difference.
Smokey Todd,
Looking at the pic of of your tank, it is rounded on each end. Have you taken into consideration that the depth of the domes is approximately 12 of te tank at regular diameter Measure the depth of your domes and divide them by 1/2 then add to the tank volume at regular diameter...
Nice cooker. I seasoned before I sandblasted and sand stuck to the oil on the inside I used Rustoleum High Heat 1200 degree. Get at Lowe's. Nice satin finish, use spay gun and buy quarts not spray cans. Spray gun puts on more paint. Spray a coat, let tack and spray on another.

Well, this one is almost done. Have to finish a couple of racks and paint it. Did the first fire test today. Had some smoke leaks around the CC door so will have to gasket it, but the temp holds as is.
Used 3 inches of Mesquite charcoal and three Eucalyptus splits. Got to 225 in 45 minutes and...
Hi. Will be a large expanded metal shelf in front off cc mounted low like a Lang. The door rest seems to be holding the weight well. Is made from one of the 3/8" legs from the propane tank. If not I will install a counter balance. The fire basket will have 1/4 x 1" straps around the top with...
Well, after several months of work, many trips to the steel yard, and several trips through Feldon's calculator my smoker is nearing completion. We made a 10' bed trailer of which the cook chamber takes 5'. In front of the smoker will be a 2 x 4 grill and wood storage. The fire box is 21 x 21 x21...
Hi, my build is similar to yours, but a propane tank. You need to use the inside dimensions of the tank for your calves. I used Dave's calculator. If you use a removable baffle, how will you attach a drain pipe? There are tons of smokers in SoCal and lots of competitions. Check the KCBS roster...
I smoke a lot of pork butts and shoulders fo a local restaurant. Most take 8 hours at 225 to 250. I use a maverick with the probes left in all the time. They are wrapped at 175 (about the stall point). I cook to 195 with applejuice in the foil. It pulls easily at 195, but no less. Check your...
