    PBS & corn cobs

    Last night on Cooks Country (PBS), they smoked pork ribs (indirect heat in a Weber kettle) using corn cobs and a foil packet containing 1\4 C of corn meal. Has anyone tried this before? Thanks for your help......Paul

    Thank you for the recipe idea. I have 4 Muscovy duck breasts in the freezer right now. I think I'll give it a try. Muscovy ducks are more like geese than they are like ducks.

    Thanks Martin, Chef JJ, and everyone else that helped out. When i first started out baking, i measured everything by weight in grams (Alton Brown's idea), but all the good bakers i have known not only don't measure, (handful of this, fistful of that) they seldom use a recipe. This drives me nuts...

    Four hours as stated above and start with a dry surface or in the case of bacon or fish, a pellicle. When smoking a piece of meat i will blot it with a paper towel to remove excess moisture.
