Started off with 4lb of wings cleaned dried and put in the fridge for 2 hrs to dehydrate ( found out that helps crisp the skin in my mes 30). Took them out and dry rubbed with my own rub.
Next went into the smoker at 250 for 2 hrs with Apple wood. Came out good I think, crisp skin and good...
I just set at 250 my mes runs about 15 degrees cooler then the temp I set it at...I let it heat up n then as stated above I add wood about 5 mins before to get the smoke going. Hasn't failed me yet! I found 250 gives me a nice crisp skin also

Gonna smoke the a couple of chickens this weekend...gonna use my same as I've used before for cooking times, but want to inject these birds not brine was looking for input on what ppl are using as injection liquid and how did it turn out?

When u wrapped did u add a juice or fluid I personal add apple juice n brown sugar that way they kinda braised during that 2hr phase n for the last hr I glaze every 20 mins or so.

I went very basic since it was my first butt I used onion powder garlic salt pepper and paprika. I injected with straight apple juice just to keep it moist. I used an mes 30 and add stated before around 9 hours to complete. I'm actually sitting on the beach with my little Weber grill heating...
Trying my first butt today it's a 4lb bone in, I injected it last night along with the rub and wrapped and into the frig for 12 hrs. Heated the smoker to 230 and in it went for sind 7.5 to 8 hrs or until 205 IT.
