I watched the video the Boathouse constructing the 24 x 60. If you can't smoke it in that you can't smoke. That' awesome smoker.

I own a 3/8 inch offset they do not need a lot of wood once the thermal mass gets hot. For way up north i would go with the Boathouse.

I Is This Hickory? bought some wood today and it is suppose to be hickory. I believe it is but wanted to run it by you guys.

Is there a difference between sapwood and heartwood. I bought some bundles of hickory, sugar maple, and one cherry, 5 bundles total. I noticed after having gotten them home that 80% of the wood was sapwood. I am new to smoking on a offset smoker or anything else for that matter. You may not be...

I find my wood where ever I can. I look for guy who cut down trees. Worked so far.
