So I notice that they offer the regular and 1800w version. my element in my ECB is 1500W so i'm thinking I would need the larger one but wasn't sure if I would be better off going with the smaller dual probe model and changing my element to a hot plate or something. Just thoughts.

My thoughts were that i could put a pork shoulder on the pit let it smoke for a couple hours then lower the temp to basically keep it warm till I get home.
in looking at the Auber PID controllers I stumbled upon their premade setups. Has anyone used one of these and how do they compare to buying that parts and making one yourself?

So in my brief reading it seems there are several ways to regulate temps on these little guys. I have been simply running the variable speed router control and chasing the temp. I use a maverick dual remote thermometer.

So you smoke with chips and not chunks? I had heard of guys putting a pie tin on the lava rocks too. Also do you just plug yours in straight in or do you have some sort of way to control the electrical current going to the element.
