    First Brisket Experiment

Pictures were not worthy of posting I'm afraid, the meat turned out well, but for some reason the rub never set? It was extremely soggy and I had to scrape it all off. Very disappointing. Does anyone know what causes this?

    First Brisket Experiment

Also FYI, I plan on using the same method that I have used for my butts that turned out incredibly. 225* until it hits around 160-165 then foil until it's finished.  I have no time limit that it needs to be done by and starting it early tonight I don't think time will be a factor.  I've got...

    First Brisket Experiment

Well guys, I was all excited to try my new experiment. Went to Publix to pick up my meat.  As I'm approaching the meat section, I see a light shining down from heaven on a beautiful 14 lb packer. Pick it up and it bends nicely, no brown spots, USDA Choice, no hard fat. I turn it over and see the...

    First Brisket Experiment

Doing my first brisket this weekend.  Been doing some research and I've decided to inject with a 50/50 apple juice/coke mixture. Has anyone tried this before?  Sounds pretty good to me and a little whacky so I think I'll give it a shot. Would love to hear some opinions. JB

    Newb needing advice

Hey guys, it turned out great. Better than my first butt last week. Even had a few people offer to back a barbecue restaurant if I wanted to start one, haha. Overall it took 16 hours to cook, 4 1/2 hours of sleep but it was a great time. Unfortunately we had so many people over at the house I...

I've added a exhaust extension and installed replacement gasket around the smoking chamber lid, but I still lose smoke. It generally retains the heat level, I don't have any experience with other smokers, but it's not like it fluxuates wildly. I can remove the top grate and put coals on the...

I built a makeshift basket out of some pretty thick chicken wire type material but have not used it out of fear that it would melt and cause more problems. The way the ok joe sets up the ash isn't going to be an issue, lots of room under the grate, when you say a bed of coals to start your...

Thanks, I've got some lump charcoal and a bag of kingsford, with the kingsford (used it last time) I had to add a few lit coals every hour or so, the lump should burner slower correct? Also have some cherry wood soaking as we speak.

Cooked my first butt and it turned out great last weekend, this weekend were having a big party, cooking a 6.35 & 7.5 lb butt and will need to start it around 1-2 am to get it finished around the right time. I've got a ok Joe horizontal smoker. Any tips advice on how to situate coals and wood...

    New to Smoking

One of my concerns, you'll notice in the picture that the firebox looks like it's sagging a little, however it doesn't leak hardly at all between the FB and the smoking chamber. Is that something I should be concerned about? I did not put it together (pre assembled) and did not think to check...

    New to Smoking

Seasoning the new Ok Joe with my smoking buddy today. Got a few leakes in the doors I've got to fix, but overall I'm pretty happy. Been cooking hot around 450 for an hour, think ill tone it down and try to hold it at 220-230 from here on out.
