    Smoked my first Boston butt yesterday on my offset and had great results. Smoked the butt until it reached a IT of 160, wrapped it up in foil at that point then I placed it right back in the same spot and let the smoker do its job.     My daughters birthday is coming up soon and I thought about smoking a few racks of ribs for everyone at the party.     I see what you mean about the thermo reading the air inside the cooking chamber, makes sense. What doesn't is why its such a huge difference in temp change from lid to grate.
