Hey all. I am going to do a smoker full of whole chickens soon and was wondering and wanting the opinions of what everyone thinks is the best wood to use for poultry. What meat temps should I be looking for at the completion of the cook and what is a good average time per pound you can expect... -
1 butt vs 2 butt cook times
Shyzabrau, Maybe my question is confusing. I will be placing the meat at the same time. I was questioning if my total cook times to desired temperature will be less if I did two six pound butts verses one twelve pound butt. naturally the butts would be much smaller in diameter. -

UDS paint staying tacky!???
Travesty, if your using your UDS for other things I guess you would need high temp paint. Good luck to you in your future.- jarnold

Hey Travisty, Sounds like you have a mess on your hands. It sounds as if you have gotten some bad paint. I wouldn't think its anything you have done. I think it's as much for looks as it is functional but I do think it has purpose. If your trying to smoke on a breezy day it is less susceptible to the wind driven into the smoker if it was windy. If you think about it just a slide vent would be hard to control the natural drafts of wind unless...- jarnold

Finally getting started on my UDS build.
Joe, How did you locate a 55 gallon drum that has the dimensions you quoted? I noticed you said your drum was 56" and a standard common 55 gallon drum is only around 34". I have thought about adding height to one to get more room but if you can find one this size that's great.- jarnold
